Lechon Crawl: Alejo's, Then Zubuchon, Then Skip CnT

Start at Alejo's Carcar Lechon. The Cebu City branch is at Unit 1, The Strip in Banilad, open daily from 08:00 to 20:00. Order 1/4 kilo of chopped lechon belly, no liver sauce, extra spiced vinegar. The skin shatters audibly. The meat is seasoned through to the bone with salt, garlic and lemongrass. You do not need sauce. That is the test.

Next, Zubuchon at One Mango Avenue. Order the boneless lechon, 300 grams. The lemongrass and green onion stuffing is distinctive. Go at lunch. After 14:00 on weekdays the meat dries out.

Skip Lantaw Floating Native Restaurant in Cordova, Mactan. The view is the product. The food is secondary. Grilled items arrive overcooked and fried calamari comes cold. Only go if sunset photography is the goal and you have already eaten elsewhere.

Breakfast: Puso, Danggit, And Sikwate

Puso is hanging rice, steamed in woven coconut-frond pouches, eaten at room temperature. PHP 5 to 10 per piece. Buy it at any roadside barbecue stand, Larsian sa Fuente, or Carbon Market.
